    Second Crop from Rick Buchiniani Vineyards
    about 850 lbs. Picked 10/10/98
    Sugar was 21 brix at harvest
    1.07 Total Acidity at harvest
    added 55 ppm sulfite at Crush
    added 10 lbs cane sugar to must to bring sugar up to 23.5 brix
    Pitched with K-1 yeast on 10/10/98
    Tried to start Malo-lactic culture 10/12


    October 20th 1998

    Pressed the must today and put in stainless steel. total volume was 63 gallons.
