1.07 Total Acidity at harvest
added 55 ppm sulfite at Crush
added 10 lbs cane sugar to must to bring sugar up to 23.5 brix
Pitched with K-1 yeast on 10/10/98
Tried to start Malo-lactic culture 10/12
October 20th 1998
Pressed the must today and put in stainless steel. total volume
was 63 gallons.
