35 grams Diamonium Phosphate
Total Acidity test with new Sodium Hydroxide, 7.3 grams per liter. This should drop a bit with malo-lactic fermentation.

Pressing today, yeild was about 50 gallons put in 2 30 gallon oak barrels.

Racking Yield was 51 gallons, to top up 1.5 gallons 2023 Petite Sirah
pH 3.68 T.A. 5.89 with drop in acidity I believe it has gone through Malo-latic fermentation.
