2018 Petite Sirah Port
October 10th 21018
pressed off fermenting Petite Sirah
18 gallons of juice at 12° Brix
here is the math to get it to my estimate of 19.75%ABV
18 gallons @ 6.96%ABV (calculated based
on what sugar got fermented out) = 125.28
1.8 gallons @95%ABV (everclear)= 171.00
1.5 gallons @83%ABV (Merlot Brandy) =124.5
Total Gallons 21.3
Total Alcohol = 420.78 /21.3 = 19.75% ABV
Sugar Calculation
18 gallons @ 12° brix = 216 parts sugar
216/21.3 gallons=10.14% sugar
Put in new 20 gallon American Oak barrel
October 23rd 2018
racked
January 18th 2019
racked and added 30 ppm SO2
April 2nd 2019
lab test 19.% ABV
December 18th 2020
Port is still barrel and gets topped up regularly.
It's really a bit too sweet so may end up reducing the sugar before being
bottled.
