Pressed Must and came up with 39 gallons of wine
to be racked in a couple weeks
Have racked the wine twice since October and have added
toasted french oak chips to total about 1.5 lbs.
currently have 37.75 gallons
PH tested at 3.96 and T.A. was .60
Racked wine added 28 ppm sulfite and bottled all that would not fit in 30 gallon Barrel (3 cases) Plan is to bottle rest just before 2013 harvest
